Christmas Breakfast Idea: Healthy Blueberry Banana Loaf (Blogmas Day 7)

Welcome back to blogmas and we're on day 7!

If you're looking for something really easy and yummy to make for the family Christmas morning, look no further- I have the recipe for you! I made this blueberry loaf with my sister and will probably try to make it again Christmas Day for the family. It's a blueberry Banana loaf and I found the recipe over on Pinterest I'll be sure to link it for you so you can read more about it from the original author!

I'm all about finding healthy recipes to fuel my family and I love the idea of something quick, warm and full of flavor for Christmas. Here's what you need to get the goods in yo' belly!

INGREDIENTS:

  • ½ cup (1 stick) butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, beaten
  • 3 ripe bananas, mashed
  • 2 cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1½ cups fresh blueberries tossed in 1 Tablespoon of flour

This bread is going to be baked at 375 for 15 minutes. Mix your cream, butter and sugar together first then mash together your bananas and eggs and combine together. Sift all dry ingredients and slowly combine together folding the wet ingredients into the dry. Be sure to coat your blueberries in flour or they'll sink to the bottom! Pour into a greased pan and bake. Keep in an eye on your loaf and take out when the edges are golden brown and the center is fully baked. Nothing else to do but enjoy!
